Made with Shullsburg Creamery Smoked Gouda & Italia Parmesan
Fall is upon us, and the nights are getting chillier. Oven bakes hit the spot on crisp fall nights, but you also don’t want those last garden harvests to go to waste. We’ve got a perfect meal solution that bids so long to Summer and welcomes Autumn.
Ingredients:
- 2 cups marinara sauce
- 1/3 cup mascarpone
- Italian parsley, to taste
- Thyme, to taste
- Italian seasoning, to taste
- 1lb ziti noodles
- Shullsburg Creamery Smoked Gouda (about 8oz), thinly sliced
- ¼ cup Italia Grated Parmesan
- 1 cup diced zucchini
- 1 cup halved cherry tomatoes
Instructions:
Preheat oven to 350° and prepare a pot of water to boil for your ziti. While oven and pot are heating, mix marinara sauce, mascarpone and your herbs and spices. Set aside.
Cook ziti in boiling water according to package directions. While ziti is cooking, heat olive oil in a skillet on stovetop at medium-heat and saute your zucchini and cherry tomatoes for about 5 minutes until soft, tossing frequently so as not to burn.
Combine ziti, sauteed vegetables and sauce mixture and pour into 9”x13” baking dish. Line the top of your dish with thinly sliced strips of Smoked Gouda, and sprinkle Parmesan evenly across the top.
Cover in foil and bake for about 30 minutes and enjoy those last tastes of Summer alongside the cozy warmth of Fall flavors!
